My Top Autumn Recipes

This is definitely the type of weather where we feel like having warming, hearty dishes to fight off the chill. Here are a few of my favourites that you can easily prepare when working away and staying in serviced accommodation.

Butternut squash soup

A comforting and warming soup with seasonal vegetables, that is perfect for those chilly evenings!

  • A peeled and deseeded butternut squash, cut into cubes
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 1 pepper, cut into cubes
  • Olive oil
  • 1 litre of vegetable stock

Preheat oven to 200C/180C Fan/Gas 6. Add the prepared ingredients to a roasting pan and drizzle the oil on top. Pop in the oven for approx. 45 minutes, or until golden brown.

Place a large saucepan over medium heat, and add some oil. Pour in the stock and bring to a boil, then stir in the roasted vegetables and add seasoning to your preference, I love to add a pinch of chilli powder and some pepper. Remove the saucepan from the heat and then blend.

Butternut squash soup

Easy Traybake

When you don’t feel like having a big clear-up after baking try this one.

  • Olive oil
  • 2 onions, sliced
  • 2 peppers, chopped
  • Garlic cloves, chopped
  • Handful of basil
  • 2 sweet potatoes
  • 12 sausages
  • 200ml white wine
  • Salt and pepper

Preheat the oven to 220C/200C Fan/Gas 7. Place all the ingredients in a roasting pan and coat in oil. Season to your preference. Roast for about 30–35 minutes until golden-brown. Then add in the wine and cook for a further 20 minutes. That’s all there is to it!

Easy Traybake

Mac & Cheese

This is a favourite holiday recipe for me and the family.

  • 5oz Cheese
  • Butter
  • 1 onion, chopped
  • Thyme
  • 1 tsp paprika and Dijon Mustard
  • Mushrooms
  • Panko crumbs
  • Stock
  • 1b macaroni
  • Truffle oil if you want to make it extra special

Sauté the mushrooms, onions, and thyme in the butter. Add in the stock and macaroni and heat until al dente, and then stir in cheese and season to your preference.
Pour into a greased dish, add truffle oil if you want, and then sprinkle the remaining cheese and panko crumbs on top. Put it under the grill to brown.

The right type of luggage depends on the type of trip and the length of time you’ll be away. For example, if you’re travelling to a few different places you might want to take a large traveller's backpack. If it’s a short trip, it may be more suitable to pack everything in a carry-on suitcase. This allows you to save time as you won’t have to wait to collect your luggage, there’s no chance it will get lost, and it also makes it easier to pack and unpack with less stuff to go through. It will also save you some money as most airlines charge more to check in a bag.

Travel scale

It is worth getting a travel scale, especially if you tend to go over the weight restriction! It will also help you to prioritise items in order of importance when packing.

Rolling vs. Folding

There has always been a big debate over whether it is more effective to roll or flat pack your clothes.
Rolling your clothes results in less creasing and helping to keep them more organised. But there are some types of clothing items that end up taking more space if rolled. I personally think a mixture of rolling and folding is the best way forward.

Keeping organised

Using packing cubes will help you to stay organised and fit more items in. It is definitely satisfying knowing where everything is! Also having a bag with a drawstring for your laundry helps you know exactly what needs washing when you get back home.

I have always found eating healthy is difficult while working away from home. Here are 3 top tips to help you focus on having a healthier working trip away:

Stay in accommodation with a kitchen

Be sure to select accommodation that has a fully equipped kitchen, especially if you are staying away for more than one night, as the most simplest and effective way of staying healthy is cooking your own meals. It is easy to forget about portion control when you’re out!

Choose recipes that are based on lean proteins such as turkey, chicken, or lean red meats like fillet of pork. Restaurants and takeaways seem quick and easy when you’re your tired, but the meals can often make you feel even more sluggish and you certainly won’t get the nutrients you need!

Careful selection

If you do decide to eat out at a restaurant, before you get there make sure you check the menu. It means you have made an informed decision and can’t be influenced by other people you are dining with. There’s also no harm in asking for healthier alternative suggestions or asking if a dish can be adapted e.g. swap chips for a salad or some vegetables. There is also the option of having a starter as your main course, as restaurants do tend to serve bigger portions than you would normally tend to have at home.

Christmas is definitely a time for feasting! Here are our top 3 simple, yet delicious festive recipes. Why not give them a try…

Mince Pie

There are plenty of readymade mince pies on the shelves but you can’t beat homemade mince pies at Christmas, they are just delicious.

Ingredients:

  • 225g cold butter
  • 350g plain flour
  • 100g caster sugar
  • 280g mincemeat
  • 1 egg
  • Icing sugar to dust

Instructions:

  • To make the pastry, rub the butter and flour, mix in the caster sugar and a pinch of salt
  • Combine and knead the pastry
  • Heat the oven to 180C. Place 12 small balls of pastry into the holes of the tin and push out
  • Spoon mincemeat into the pies
  • Take slightly smaller balls of pastry than before and pat them out to make round lids, and place on top and press to seal the edges using a bit of milk
  • Brush the tops of the pies with beaten egg
  • Bake for 20 minutes until golden
  • To serve, lightly dust with the icing sugar, makes them look fancier!

 

Mince Pies

Eggnog

Sweet and spicey, it’s definitely a winner in our eyes!

Ingredients:

  • 1 litre full fat milk
  • Cinnamon stick
  • Gratings of nutmeg
  • Teaspoon of vanilla extract
  • 2 egg yolks
  • 90g sugar

Instructions:

  • Pour the milk into a large pan. Add the spices and vanilla and heat gently
  • Whisk egg yolks and sugar
  • Slowly pour the hot milk over the egg yolks, stirring all the time, until steam rises
  • Then it’s ready to serve with a bit of Brandy!
Eggnog

Trifle

Festive trifle is definitely our alternative recommendation to Christmas pudding.

Ingredients:

  • 3 packets of jelly
  • 1 sponge
  • 800 ml custard
  • 300 ml double cream
  • 1 tablespoon caster sugar
  • 700g blueberries
  • 2 tablespoons sugar
  • Any decorations you like!

Instructions:

  • Make the jelly
  • Pour into trifle dish so that it covers the base and place in the fridge
  • Make the compote by heating the berries with a spoon of water, add sugar and simmer until thick, then let it cool
  • Then start assembling! Jelly is already in, so slice the cake and place on top, then layer the custard, then the compote
  • Whip cream and sugar and pipe it on top
  • Pop on any decorations on top that take your fancy

Derby Museum & Art Gallery

Based in Derby City Centre, the Derby Museum and Art Gallery was established in 1879 along with Derby Central Library. The Derby Museum & Art Gallery is home to a great range of nationally important collections. But most importantly it holds the world’s largest collection of work by the 18th Century artist Joseph Wright, born in Derby in 1734. Joseph Wright is an internationally renowned artist, famed as a “painter of light” and for his association with key members of the intellectual movement known as the Enlightenment. He is now considered to be one of Britain’s most interesting and wide-ranging painters. Wright’s art collection can be seen on the walls of some of the most famous galleries, such as New York’s Metropolitan Museum of Art, and Tate Britain but the largest, permanent collection of paintings is displayed in Derby – I’d recommend not missing out on seeing the spectacular ‘Orrery’ painting.

The Derby Museum & Gallery is easily accessible to all and you’ll be happy to know it is free to enter and there is no need to pre-book. I would also recommend stopping by at the gift shop, which supports local makers and includes ranges of local tipples, ceramics and handmade crafts, to toys.

So why not take a visit this summer, it really is the perfect family day out.

The Museum of Making

This is a museum of industry and history, located in the Derwent Valley Mills UNESCO World Heritage Site. It is a contemporary space which tells the story of Derby’s 300-year history of making to inspire creativity on what is regarded as the site of the world’s first factory.

You’ll be happy to hear that the entry to the Museum of Making is free and you do not need to pre-book for general admission but I would advise booking for those special exhibitions.

There’s plenty to explore when visiting but make sure you look out for the rare Lowry painting ‘Houses near a Mill’ that was originally bought for £42 but is now worth an estimated £1 million! I would also recommend looking out for the Railways Revealed exhibition which shows the impact of railways on Derby’s landscape.

As well as the many exhibitions, there is the River Kitchen at Museum of Making, which is the perfect place to relax, serving fresh, seasonal and local food. There is a real focus on produce that stems from the Derbyshire heritage. Check out the menu ahead of your visit.

Also, for those of you who have a Museum of Making membership and are looking for somewhere creative to work, there is co-working space available at The Prospect, situated on the top floor. We are lucky to have so many outdoor scenic areas to explore in Derby. Here are our top recommendations on the most picturesque parks to explore:

Darley Park

Darley Park is a large, picturesque and popular park situated within walking distance of the city centre. It is situated on the River Derwent and acts as the gateway to the Derwent Valley Mills World Heritage Site.

It hosts many major events throughout the year, including the classical Darley Park Concert. It really does have something to offer for everyone – a nature reserve, cricket and rowing clubs, beautiful butterfly gardens and the largest hydrangea collection in the UK. It is a popular destination with dog walkers, and the sweet little café makes for a lovely break during a long walk.

Darley Park truly is a peaceful place to escape the city life.

Derby Arboretum

The Derby Arboretum was the first specially designed public park in Britain. Joseph Strutt commissioned and donated the park for the benefit of citizens of Derby in 1840. The intention was a botanical tree garden for instruction as well as leisure.

John Claudius Loudon designed, constructed and planted the gardens, while EB Lamb designed the two Tudor style lodges. Some of the trees are listed on the British Isles Tree Register, a catalogue of notable trees in the country recorded by the Forestry Commission.

The Arboretum is extremely picturesque with a fine collection of trees, and is Grade II* listed – a must see!

Markeaton Park

Markeaton Park on the outskirts of Derby is Derbyshire's biggest and most visited park. It offers rowing boats, mini golf, an outside pool area, duck feeding areas and an amazing play area for kids including a pirate ship! On the grounds there is also The Craft Village which houses a range of little shops and the cafe, called The Orangery which is set in an old stable yard – extremely pretty!

But behind the modern day park lays a fascinating history that is waiting to be discovered. The park as we know it today can be traced back to the medieval period, when the first park was laid out. Over the following centuries the park went through many changes, from arable fields to an enclosed designed 18th century park and hall and finally at the beginning of the 20th century into the public park of today. The park has many features that mark this history: ancient veteran trees, historic lost roads, old arable field patterns, the 18th century park and buildings and the remains of a Second World War army camp!

There are plenty of great parks to explore in Derby.

Looking for somewhere nice for a spot of lunch in Derby City Centre?

The BookCafe

For the past decade, the Bookcafe has occupied what was once a bank. It’s a lovely historic setting that that emphasises comfort food and friendly service.
I would recommend trying some of the savoury dishes - such as the pulled pork bao buns or baked sweet potato with homemade harissa spiced mixed beans, yum! Or if you have more of a sweet tooth you must try the pancakes. Their dishes are freshly made and quite often locally sourced.

Hide Burger Bar

Their goal is to serve the best British Burger in Derby – and I think they’ve achieved that goal! There’s plenty on the menu but the focus is definitely perfect burgers. The pattys are made from 100% freshly ground Derbyshire beef, and served in a brioche bun, because that is how it should be!

HIDE Burger Bar is based in Derby’s converted Magistrates Court, now named Riverside Chambers.

The Blacksmiths Lounge

Why not check out The Blacksmiths Lounge in Sadler Gate, Derby City Centre. A perfect venue if you want a cheeky lunchtime glass of wine or cocktail with a delicious charcuterie board! It certainly is a lovely British-European style bistro with a buzzy atmosphere.

If you fancy a later lunch on a Saturday or Sunday, this venue is ideal as there’s often live music across the weekends, as well as some amazing cocktails!
